Ingredients
- 2 Carrots, peeled and coarsely grated
- 2 Celery stalks, finely chopped
- 1 Red pepper, finely sliced with seeds removed
- 2 Spring onions, sliced
- ½ cup Fresh coriander
- ½ cup Cashew nuts, roasted
- 150 g Crispy noodles
Dressing
- 2 Tbsp Soy sauce
- 3 Tbsp Sweet chilli sauce
- 2 Limes, juice
Directions
- Combine salad ingredients in a large bowl. Place dressing ingredients in a small bowl and stir to combine.
- Pour dressing over salad and toss well. This salad is best served immediately after tossing, so the noodles don’t become soggy.
